A Short Interview To Get To Know Rafael...

Briefly describe your current job description and the company that you work for.

Executive Chef for Alfred’s Catering for the past 4 years. I cook everything from Tex Mex, Fusion, European, Asian, to Pastries and Desserts. I'm also in charge of developing new menus, creating new dishes and quality control.

How long have you been in the events industry?

Started working for parents bakery in the San Francisco Bay Area at the age of 10. Left the food industry in my 20’s to pursue other career paths. Meanwhile continued to host and cater private events. Went back to culinary school in Portland, Oregon in my mid 30’s to pursue a Pastry Arts Degree. Externed at Club Med in the Caribbean for 4 months then returned to Olympia, Washington to open a pastry and sandwich shop. Moved to Texas 5 years ago to escape the dreary weather in Washington State and be closer to family who moved to the area.

What do you love about the events industry?

The opportunities to be creative and produce great food.

Why did you join NACE and what do you hope to gain from being a member?

Alfred and I thought it was time to come out of my cave periodically and be more involved in the public side of the business.

Tell us something unique about you

Used to watch cooking shows on PBS when I was 9 instead of Saturday morning cartoons.

What is your favorite happy hour in town? Please do share details ;)

Anywhere there is a good Mexican Martini and Queso Compuesto. Better yet, Queso Flameado.

What is #1 on your bucket list?

Do a culinary and eating tour of Europe.

What is your biggest accomplishment in life so far?

Starting and operating my own pastry and sandwich shop called Tasty Morsels in Olympia, Washington.

What does a perfect day look like to you?

Relaxing, having brunch, spending time with my dog, spending time with family and friends.

If you could only keep only 3 possessions, what would they be?

I don’t even want to think about this one.

What is your guilty pleasure?

Chicken Fried Steak and Blue Bell Ice Cream
